Olive Crostini

Glancy Family Cookbook Volume II, chapter 2

Ingredients

1 baguette
1/2 cup green olives, chopped
1 can black olives, drained and chopped
1/3 cup Parmesan cheese (freshly grated or from the deli section)
2 tbsp butter, melted
2 tbsp olive oil
2 cloves garlic, chopped
1/2 cup mozzarella cheese, shredded
freshly ground pepper
parsley, chopped

Steps

Slice baguette thinly. Arrange slices on cookie sheet.
Broil until one side is lightly toasted. Remove from oven.
Preheat oven to 350 degrees.
Combine remaining ingredients in a bowl.
Spread olive mixture on baguette slices.
Bake for 15 minutes.
