Bruschetta

Glancy Family Cookbook Volume II, chapter 2

Yields about enough for 4-6 people

Ingredients

2 medium tomatoes, diced 1/4"
2 tbsp fresh basil, finely chopped
1/2 tsp salt
1/2 tsp garlic, minced
1/2 tsp crushed peppercorns (Amy uses regular pepper)
1 baguette
a few cloves garlic, peeled

Steps

Mix ingredients through peppercorn. Taste -- add more of what you want!
Slice baguette. Toast 2" from broiler until golden brown.
Next, rub peeled garlic cloves over each toast. Brush on extra-virgin olive oil.
Serve the bruschetta and toast.
The recipe as written says:

Top with drained tomato mixture.
Return to 350 degree oven for 5 minutes.
