Clyde's Chili

Glancy Family Cookbook Volume II, chapter 3

Erin's note: Once this is cooked, I often transfer to a crockpot for groups of people. Also, very easy to double or triple!

Ingredients

1 tbsp vegetable oil
1 lb onion, diced small (yes, 1 pound)
1 tbsp fresh garlic
1 1/2 lb ground beef
1 25-oz can Bush's chili beans
1 12-oz jar chili sauce
2 tbsp cayenne pepper, or less, to taste
1/4 cup chili powder
2 tbsp Worcestershire sauce

Steps

In a pot, sauté the onion and garlic in vegetable oil until golden brown.
Add the beef to the onions and cook through.
Add the rest of the ingredients and stir until just blended.
Cook the chili over medium heat for about 10 minutes.
(Editor's note: if you're making this for the first time, go easy on the cayenne pepper -- maybe a teaspoon or two to start, then add to taste. As written this is quite a hot recipe.)
