Lowcountry Shrimp Boil

Serves 4-6

Quantities are tricky on this; will serve 4-6 people depending on appetites. Large pieces of red potatoes could be added if desired, along with the sausage.

Ingredients

Old Bay seasoning
1-2 onions
1 lb kielbasa-type sausage
4 ears corn, peeled and broken in half (fresh or frozen)
1 1/2 lb uncooked shrimp, still in the shell
cocktail sauce (optional)

Steps

Bring a very large pot of water to boil.
Peel and slice onions. Add to boiling water with Old Bay seasoning -- maybe 3 tablespoons.
Turn down to simmer and cook for 10-15 minutes.
Slice sausage into bite-size pieces. Add to water and cook on low boil for 15 minutes.
Add more Old Bay seasoning if desired. You should be able to smell it and notice it in the water.
Add corn and cook for 5 minutes if fresh, 10-12 minutes if frozen.
Add shrimp and cook just until pink, about 5 minutes.
Serve with cocktail sauce if desired.
