Savory Chicken Sauté

Yields 4 servings

One from mom's later years.

Ingredients

6 slices bacon
3/4 to 1 lb boneless, skinless chicken breasts
2 tbsp flour
1/8 tsp salt, or seasoned salt
1/8 tsp pepper
2 cloves garlic, minced
1 medium onion, diced
1 14-oz can diced tomatoes (Del Monte seasoned with basil and oregano is good)
dash of ground red pepper
1 1/2 tsp Worcestershire sauce
1/4 cup, plus 2 tbsp white wine
3 tbsp fresh basil, chopped (or 1 tsp dried)
hot cooked pasta

Steps

In large skillet, cook bacon. Crumble and set aside.
Reserve 1 tablespoon drippings from skillet.
Cut each chicken breast in 3-4 long strips.
Dredge in flour, salt, and pepper.
Sauté onion in reserved bacon drippings for 2-3 minutes. Add garlic and continue to sauté.
Add chicken and cook 3-4 minutes, turning with tongs, until browned.
Add remaining ingredients and stir. Simmer 5 minutes until chicken is cooked thoroughly.
Serve over pasta and garnish with crumbled bacon.
