Shish Kebabs

Glancy Family Cookbook Volume II, chapter 3

Category: Main Dishes

Yields enough for 8 kebabs

In Virginia, due to many eaters with their own preferences, we do skewers that are food-specific: chicken, beef, pineapple, mushrooms, peppers, red onions, cherry tomatoes. This also makes it easier to allow each type of food its own grilling time.

Overall recipe recommends tossing fruits/veggies with a few tablespoons of olive oil and some salt and pepper.

Ingredients

6 tbsp vegetable oil
2 tbsp sesame oil
1/4 cup soy sauce
6 small cloves garlic, minced (about 2 tbsp)
1 piece (about 1") fresh ginger, minced (about 1 tbsp)
2 medium scallions, white and green parts, sliced thin
chicken and/or beef

Steps

Whisk all ingredients through scallions in small bowl.
Marinate meat. You can either marinate on skewers, or marinate, then thread onto skewers.
Amy's note: I lean toward skewers first, because the meat becomes slippery.
