Chocolate Pinks (Small Cupcakes)

Yields about 2 dozen mini cupcakes

Amy's note: If I remember correctly, Aunt Anne made these for a picnic or party. When Mom learned they were from a Hershey's cookbook, she got a copy. I believe this is when mini-muffin tins were introduced into the family.

Today, these are often served at the Virginia Oscar party.

Ingredients

3 tbsp butter
1/2 cup granulated sugar
1 egg, separated
1/2 tsp vanilla
2/3 cup flour
1/4 tsp baking soda
3 tbsp cocoa powder
1/2 cup milk
3 tbsp butter
1 1/2 cups confectioners sugar
1 1/2 tsp vanilla
1 tbsp milk
4 drops red food coloring

Steps

For cupcakes: Preheat oven to 350 degrees.
Cream the butter and sugar together; add the egg yolk and 1/2 tsp vanilla, and beat well.
Sift together flour, baking soda, and cocoa; add with milk to other ingredients (butter/sugar mixture). Add stiffly beaten egg white.
Bake in very small buttered tins (or use mini-muffin papers) for 15 minutes.
For pink butter icing: Beat butter and sugar; stir in vanilla and milk. Beat until icing is smooth and of spreading consistency.
