Morning Glory Muffins

Ingredients

4 cups flour
2 1/2 cups sugar
4 tsp baking soda
4 tsp cinnamon
1 tsp salt
4 cups apples, peeled and grated (Granny Smith or something a little tart)
1 cup raisins
1 cup pecans, chopped
1 cup shredded coconut
1 cup carrot, grated
6 eggs
2 cups vegetable oil
4 tsp vanilla

Steps

Preheat oven to 350 degrees.
Into a large bowl, sift or whisk together flour, sugar, baking soda, cinnamon, and salt.
Stir in apples, raisins, pecans, coconut, and carrot. Mix well.
In a separate bowl, beat eggs with oil and vanilla; stir into the flour mixture until the batter is just combined.
Spoon the batter into paper-lined muffin cups, filling about 2/3 full.
Bake muffins for 35 minutes, or until they are springy to the touch.
