Chicken Breasts Supreme

Ingredients

1/4 cup flour
1 tsp paprika
2 1/2 tsp salt
1/4 cup butter
2 tsp cornstarch
1 1/2 cups half and half
1 tsp lemon peel
1 tbsp lemon juice
1 cup Swiss cheese, grated
6 boneless, skinless chicken breasts
parsley, for garnish

Steps

Preheat oven to 350 degrees.
Coat chicken with flour, salt, and paprika.
In skillet, brown both sides lightly in butter.
Add 1/4 cup water, simmer 10-15 minutes.
Remove chicken and arrange in glass baking dish.
Mix cornstarch with 1/4 cup of the half and half. Stir into drippings in skillet.
Cook, stirring, over low heat.
Gradually stir in remaining half and half, sherry, lemon peel, and juice.
Continue cooking and stirring until sauce is thick.
Pour over chicken.
Bake, covered, 20-25 minutes (sauce will be bubbly).
Remove and sprinkle with cheese. Bake a minute or two more to melt cheese.
Garnish with parsley if desired.
