Mashed Potatoes

Ingredients

4 medium potatoes, white-skinned, not Idaho or red
a little milk
4 tbsp (1/2 stick) butter or margarine

Steps

Peel potatoes and quarter. Drop into boiling, salted water and boil for 20-30 minutes until they're very soft when pricked by a fork.
Drain. Place potatoes back in pot they boiled in and add 1/2 stick (4 tablespoons) of butter or margarine.
Mash slightly with potato masher (or large spoon). With electric mixer, beat on low until all lumps are out.
Add just a little milk, not too runny! Taste potatoes and add salt if needed.
