Pear Salad

Ingredients

1 medium can pears, drained
1/2 cup pear juice, reserved from can
2 3-oz packages cream cheese, softened
smallest container heavy cream
1 package lime Jell-O

Steps

Heat pear juice to boiling and dilute Jell-O. Set aside 2 tablespoons of heavy cream; whip the rest.
In a separate bowl, cream the 2 tablespoons heavy cream and the cream cheese.
Add cream cheese mixture to Jell-O mix, beat with beaters.
Mash pears, add to mixture. Fold in the whipped cream.
Pour into mold (or 8" square baking dish) and chill for hours (overnight or all day).
To unmold, rest mold in a few inches of warm water in the sink for 30-60 seconds. Run tip of knife around top of Jell-O.
Place plate on top of mold and flip over to invert. If Jell-O does not fall right out, put back in water for 30 seconds and try again.
Don't leave in water longer or the Jell-O will begin to 'melt'.
