Amy's Peanut Butter Balls

Yields TONS. Can easily be halved.

Ingredients

2 boxes confectioners sugar
18 oz creamy peanut butter
3 sticks (24 oz) butter, at room temperature
1 tbsp vanilla
3 bags chocolate chips (good quality)

Steps

Mash first four ingredients together. Shape into balls; chill on cookie sheets until firm.
Melt chocolate chips in microwave or over very, very low heat, stirring constantly.
Dip peanut butter balls into chocolate, coating completely. Chill.
