Whipped Cream

If desired, bowl and beaters may be chilled ahead of time; the cream will whip more quickly. Traditionally mom used granulated sugar, but confectioners sugar may be substituted.

Ingredients

16 oz heavy cream
4 tbsp sugar
2 scant tsp vanilla

Steps

Beat heavy cream until stiff peaks form; be careful not to over-beat, or cream will turn to a butter-like consistency.
Gently fold in sugar and vanilla.
The title of this chapter refers to a visit to New York that Amy, Bridget, Brendan, and Mary Grace had with Jim and Chantal, where at Café Lalo, the waitress referred to the group as the 'whipped cream family' due to the impressive number of sides of whipped cream ordered. It goes back generations, though: Grandad Glancy, when asked what his favorite dessert was, would always answer, "whipped cream." But then, this was a man who claimed that in the coal mines they always ate dessert first -- just in case. Enjoy!
