Maggie's Martha's Vineyard Carrot Cake

Ingredients

1 3/4 cups sugar
3 eggs, whisked
3/4 cup oil
4 cups carrot, grated
2 cups flour
1/2 tsp salt
1/2 tsp cloves
2 tsp cinnamon
2 tsp baking soda

Steps

Preheat oven to 350 degrees.
Grease a 13" x 9" pan, or two layer cake pans.
Stir wet ingredients (sugar, eggs, oil, carrot) together in a bowl.
In a slightly larger bowl, gently whisk remaining dry ingredients together.
Mix wet ingredients into dry ingredients, stirring thoroughly by hand.
Pour batter into prepared pan(s).
Bake for 30-40 minutes. When done, cake will bounce back when touched with a finger.
